Marc Fosh is an Englishman who has cooked on Mallorca for over 20 years and has held the Michelin star for years. His restaurant sits in Hotel Convent de la Missió in Palma's old town, a converted monastery with a quiet courtyard. The tasting menu (85-110 euros depending on courses) uses almost exclusively local ingredients, fish from the market, vegetables from the interior, olive oil from the Tramuntana. Portions are small (fine dining), but every course hits. At lunch there is a business menu for 42 euros, three courses, same level. Reservations are a must, especially Friday and Saturday. Dress code: smart casual, no flip-flops.
