Santa Catalina used to be Palma's fishing quarter, now it is where everybody eats. On maybe eight cross streets you will find more good restaurants than in some entire European cities. Mornings start at Mercat de l'Olivar, the large market hall that still works for locals (fish, meat, olives, empanadas at the counter). Lunch a tapa at Can Frau or El Camino. Evenings get busy but not hectic. Between the restaurants sit small cafes, vintage shops, and the colorful house facades that show up on every Mallorca Instagram feed. Two hours will give you a good impression, you can also fill a whole day.
